Derek & Lorraine
Derek & Lorraine Walsh established the Elm Tree in 2001 with a clear vision of serving the best food and wine in a sophisticated and contemporary setting in Glounthaune, County Cork.
Jimmy Murphy
Jimmy is our Executive Chef. Jimmy hails from Mitchelstown in North Cork. He is passionate about food, GAA and Soccer. Jim studied as a chef in IT Tralee before moving to London, where he worked for many years before returning to Cork. Jimmy joined the Elm Tree Team in 2014 and is a familiar face to many of our customers on the Sunday Carvery. He always takes great pride in The Elm Tree and the standards we strive for.
Roy O’Connell
Roy is our General Manager. Roy is the friendly and cheerful face that greets you at the Elm Tree and is the 'conductor of our orchestra'. He is the governor of the Elm Trees dining experience by ensuring a very professional service and attention to detail at all times. Of course, Roy is a local boy. Almost! He hails from Glanmire. Roy studied Hotel Management in CIT and graduated with distinction. In 1998 he then went to work with the Brennan Brothers in the Park Hotel in the lake side town of Kenmare. He got his chance to represent Ireland in a European Hospitality competition in Brussels
Eoin O’Connor
Eoin is one of our General Managers. He is ever present with a smile and a helping hand, nothing is ever too much trouble for him in making your visit to us a memorable one. Eoin started in the Elm Tree in 2010 and is 12 years with us this summer. He was a natural at his job and rapidly rose through the ranks to become a supervisor. He then advanced to assistant general manager and is now one of our general managers! He completed all of this while earning his Business Management diploma and honors degree! Eoin is a proud Passage West man, now living in Cloyne, but continues to represent Passage GAA club.
Lisa Gaitskill
Lisa is our Administration & Events Manager. Lisa is a familiar voice to so many of our customers as she is your point of contact to organise that special occasion or book your reservation in the restaurant. Lisa will always go that extra mile to make sure all your requirements are met and exceeded when you book a reservation at the Elm Tree. Lisa comes from South Africa where she was born and raised in the capital, Pretoria. Her passion for a career in hospitality was ignited when she had the honour of serving Nelson Mandela at his Historic Presidential Inauguration Dinner.
Keith Byrne
Keith is Food Service Supervisor and a very familiar face to so many of you. Keith hails from Little Island and went to school in Midleton. From there, he worked in Fota Island Golf Club for 10 years before moving south to Sydney, Australia. While there, Keith gained valuable experience in some of Sydney’s most trendy, up and coming establishments. Upon returning to Cork in 2008 with a wealth of knowledge, Keith started work in the Elm Tree where he soon moved up the ranks.
Jenna Stacey
Jenna is our Marketing Executive. Jenna is the person behind all things social and design at the Elm Tree Glounthaune. She is in charge of our social media, website, advertising and promotional campaigns. Jenna joined the team in January 2020 as a food and beverage assistant and was promoted to Marketing Executive in the October of 2021. She studied Marketing in Munster Technological University and worked with us part time throughout finishing her degree. She is now working full team with team here at the Elm Tree Glounthaune.
Gemma Crate
Gemma is our Administrative Coordinator. Gemma joined the team in 2010 as a food and beverage assistant and became a floor supervisor in 2020. She then became our Administrative Coordinator in 2022.
Values & Beliefs
Restaurant management thinks very hard about the origins of ingredients and foster deep relationships with producers and artisans. The restaurant chefs have a passion for cooking and servers help create a special, vibrant restaurant bar type setting. Our values & beliefs are strongly directed towards customer service, staff morale & creating a relaxed and comfortable dining and working experience. We believe that working as a team will help us create this atmopshere throughout the restaurant.
